Geometry Nodes are groups of objects that can be placed on top of each other and move together as one unit. The name suggests that they have some form of geometry (such as height) attached to them which makes them useful for creating animations where multiple elements move together as one entity.
Process
Import the 3D model of your plant.
Create geometry nodes for the root and stem of your plant, as well as for its leaves.
Set up an animation that moves you from one point to another over time.
